The Rainforest Pearl Finger Lime (Citrus australasica) is a compact Australian native citrus shrub from the Rutaceae family. It bears glossy dark-green leaves and small white flowers through spring and summer, followed by striking greenish-red fruit. Inside, the pulp forms tangy, caviar-like vesicles that burst with citrus flavour, ideal for use in drinks, desserts, and savoury dishes.
